Pansies are an edible flower! For Pansy Shortbread, bake your favorite shortbread cookie recipe and let cool. Brush each cookie with beaten egg white, and top with a freshly picked, pesticide-free pansy (washed and patted dry). Gently flatten a blossom onto the top of each cookie, brush on a bit more egg white, and sprinkle with sugar. Bake at 325 degrees for 5 more minutes. Welcome Spring!
