The lead role in this recipe is that of Ljutenitsa. It is likely to be found in the pantry throughout the year. Ljutenitsa is one of my favourite things in the Universe.
It's a bit like salsa made with tomatoes, baked red peppers, aubergines (optional), sunflower oil and spices, cooked on the stove or over open fire in the backyard.
