Probably the first dish I attempted to cook when I left home and I still find joy in making it wherever I am even after many years. It reminds me of the times when I was struggling to live on my own for the first time. And despite learning to cook quite a range of dishes now, I still find comfort in this Indian version of scrambled eggs - Egg Bhurji.
