Magic Eggplant Casserole
I copied this recipe from a dish at The Good Earth Restaurant (now defunct). Tasty and infinitely adaptable—you can leave out veg, you can add more kinds, you can make it "diet" if you use a non-sugar tomato sauce and Italian herbs instead of the pasta sauce, or you can make it sumptuous by adding some really good shredded cheese on top before baking and then serve it with a dollop of sour cream. It's also good over brown rice. This is hand-drawn and hand-lettered, with a Uniball Vision pen, and then painted with watercolors.
