I'm not too fond of over-ripe bananas, so I tweaked the Joy of Cooking's recipe, and I will make loaves throughout the year. I either make one big loaf or three small loaves, giving them away to everyone I know. I often add chocolate chips or walnuts to ensure everyone likes them.
