Cheesecake can be an intimidating thing to bake, that is until you discover Basque cheesecake. Delicious, easy to make, and no more fussing with a stressful water bath. This recipe can easily be made gluten-free by swapping the flour for tapioca starch, corn starch, or arrowroot starch (I've tried them all). This is the perfect dessert to whip up before a dinner party because it is simple, and can wait patiently in the fridge for a few days so that you can be stress-free when your guests arrive.
