These cookies are--hands down--my husband's favourite cookies. Instead of a cake for his birthday, he just asks for these guys. The recipe is incredibly simple if a bit tedious, since I need to spread each cookie thinly (I use my fingers for this), and only a few large cookies will fit on each baking sheet. But the cookies are so light and crispy, I think you will find they are well worth the effort.
