When my husband and I first moved to Sweden one of the things we missed most was salsa. We tried pretty much every salsa available in the grocery stores here and unfortunately not one of them satisfied the craving for this spice-loving, salsa queen!

We even attempted to make our own salsa without success. Finally after many versions of salsa that lacked the flavor or roundedness that give a finished quality, we came up with a recipe that, even if I say so myself, is darn near perfect. We no longer need to beg friends to ship us jars of salsa, nor do we need to load our suitcases down with bubble-wrapped jars when we travel back to visit. AND, we actually prefer it now to many that we considered favorites back in Texas. So it’s a win-win!

This salsa was created from a place of deep longing - hence the word “Anhelo” in the title, which is Spanish for longing.

Dip your chip into this tangy & spicy, roasted tomato salsa and bring your senses to life! One bite takes your imagination on a journey to the southwest where you find a desert filled with sunshine, blossoming cacti, crispy tacos & refreshing, Topo Chico, sparkling water. A margarita wouldn’t hurt either!

Hi Grace. First of all I love the illustration....so many textures and techniques--your skills are amazing.  And congrats for getting on the platform.  My friend DJ (from Souther California) taught me how to make salsa, not a roast salsa, but still a workhorse salsa good for many applications. The one trick which takes some time is to remove all the seeds when you cut the tomatoes, but to also salt tomatoes with kosher salt to draw out the moisture.  The aggressive addition of lime juice, along with all your ingredients makes for an amazing steady crowd pleaser.  We're still here in rainy, lush Boulder as the rain has turned the state into a green spot with lots of runoff from the mountains bringing new health back to the Colorado River, even bringing Lake Powell down south back to life.  I'm working to find new work and commissions, improving all my portfolios, racing gravel bikes, free climbing in the flatirons, trail running with my dog and driving across the county in July to go ride around northern Michigan and hopefully hit Mackinaw Island.  I hope to visit you sometime -- International travel hasn't been for a while, but hopefully sometime this year.  Congrats again to you and yours and the lovely illustrations.
