Between April and May it's easy to find small artichokes and it'a tradition in my family to conserve them in olive oil. I learnt this recipe from my mother who used to prepare artichokes like this, and her mother before her, and her granny even before...
It's very easy but it requires a lot of time and patience. And many pair of rubber gloves too!
