Salted Cod (Christmas cod) is a Biscayan-style cod arrived in what was then New Spain in the 16th century, when the Catholic religion was introduced and with it the customs of Lent and Easter of Nativity in which the “vigil dishes” were consumed.. Which among other characteristics do not contain red meat. In Mexico, cod is considered a “party dish” and is consumed mostly during Christmas or New Year's Eve. It is composed of dried cod. previously poached tomato ball, garlic and onion, parsley, olives, capers and tanned güero chiles.
