Birria de res or Beef Birria comes from the state of Jalisco, precisely in a town called Cocula, and was the result of a combination between indigenous and Spanish cultures in the 16th century. Currently, birria is not only prepared with goat meat, since lamb, pork, chicken, beef and some more exotic fish are also used, and to continue with the tradition, in many towns it is still prepared in a rustic oven made by a hole in the ground with heated stones.
