This kitchen art is about pindang patin (pangasius sp). A local delight from South Sumatra, Indonesia. There are many variations of pindang, the famous one use patin fish. Pindang itself is a celebration of harmony. To be able to enjoy pindang, humans must synergize with nature; maintain the sustainability of rivers and swamps, because the best fish to be cooked into pindang ideally comes from wild fish that live in rivers and swamps, not those cultivated in ponds. If the best fish are difficult to find, it means that our nature aren't in a good term tho.
