Come summer, most homes in India are fragrant with raw mangoes and a riot of color of red chilies and turmeric for the pickling season. The spices are hand pound and mixed with diced raw mangoes and either left to cure in the sun, or preserved in oil in large porcelain jars called, 'Bharani'. Pickles are enjoyed with every meal either with rice or roti (flatbreads).
