Mushroom Risotto ~ easy & pantry friendly ~

This recipe was born during the pandemic ~ I didn't have shallots and fresh mushrooms, replace with a regular onion and dried mushroom. Surprisedly, dried mushroom gave extra body for broth and taste better than just using fresh mushroom! Today, I use this "new-normal" recipe as one of my pantry recipes for everyday meals.
